what are some good brunch recipes for people with celiac’s disease?


GF waffles, pancakes or muffins (the easy way, use Pamela’s Gluten Free Pancake and Baking Mix. Found online, in some grocery stores and in most health food stores like Whole FOods. Make sure if anything was used to cook in that contained gluten, it gets cleand prior to cooking, baking GF foods.)

Fresh fruits

Plain vanilla yogurt (Yoplait is GF)

Turkey bacon (Louis Rich/Oscar Meyer is GF)

Eggs (use real eggs, no fillers and dont use flour in it) any way u like

Bite size pieces of cheese (stay away from blue cheese just to be safe. Often its GF but sometimes its not.)

Fruit smoothies (try not use to powders, protein blends, etc. Just use fresh or frozen fruit, orange juice or another juice and plain yogurt. Honey or sugar to taste.)

Basically if u are serving ppl with Celiac and u have even one thing they can eat, they’ll be greatful! We are trained to go through life like food detetcives and are never sure if we eat otehr pples food. So be open witht hem and ask them what they want! On behalf of Celiacs, thank u for trying!! :)

I need recipes ideas for a fine dining restaurants’ Sunday Brunch. I need 4 bread items. Any ideas?

This is my all-time fave for brunch (it serves about 10-12 people and you make it the night ahead):

Breakfast Casserole

1 lb. Sausage (or cooked bacon or ham)
12 eggs, beaten
8 slices white (or french or sourdough) bread, cut or broken into about 1" pieces
1-1/2 cups Cheddar cheese, shredded
2 cups milk
1 small onion, chopped
1 tsp. salt
1 tsp. baking powder
1 tsp. dry mustard (optional – but good)
Black pepper to taste
Non-stick cooking spray (just a little)

(optional – but I always add leftover/cooked veggies <like asparagus, spinach or mushrooms> … about a cup or so).

Brown sausage and drain (or dice up bacon or ham). Combine all ingredients. Pour into sprayed 9" x 13" x 2" baking dish. Cover with foil and chill overnight. Bake at 350F for about 1 hour, until lightly browned on top and knife or toothpick comes out clean.

I always serve this on Christmas morning when there are lots of people here – never fails to impress.

Serve with a selection of fresh fruit and yogurt.

Any quick brunch recipes?

We are having a brunch in the a.m. and I have no idea what to make. I have just started mastering some dinner meals forget about breakfast! So…… any good, fairly quick and easy meals anyone could suggest would be great. Breakfast/brunch ideas.

brown i pound sasuage put in a 13 x9 pan,
beat 6 eggs pour over sasuage
top with 1 package hasbrowns
top with shredded chedder cheese
bake at 350 degrees for 1 hour

breakfast/brunch recipes or ideas?

What would be a good idea for a leisurely Sat or Sunday brunch? I’m really getting tired of eggs and toast, and I’m looking for recipes that would be good for brunch.

Hoppel Poppel!
3 medium potatoes, diced
1/4 cup cooking oil
1/4 cup onions, finely diced
1 cup ham, diced
6 eggs
1/2 cup swiss cheese
1 teaspoon salt
1/4 teaspoon pepper
1 dash worcestershire sauce
1 tablespoon parsley, chopped
–Melt butter in 11 inch frying pan and saute potatoes and onion until lightly browned. Add ham and saute 5-7 minutes longer. Beat eggs with worcestershire sauce, salt, and pepper. Pour egg mixture over potato mixture. Sprinkle with parsley and reduce heat. Lift the cooked eggs from the edge of the pan with spatula so that liquid can run down and cook. When omelet is nearly done, sprinkle with grated swiss cheese and place under broiler until cheese is melted.

Quiche is one of my favorite brunch foods! Spinach, broccoli, mushroom, and bacon are all great in quiche!

Honey French Toast
1/4 cup all-purpose flour
1 tablespoon sugar
1/8 teaspoon salt
1 cup milk
3 eggs, beaten
8-10 slices texas toast bread
3 tablespoons butter or margarine
warm honey
–Add flour, sugar, salt, milk, and eggs to a mixing bowl. Whisk until well blended. In a skillet over medium-high heat, melt butter; I start with 1 tablespoon and add to it as needed. Dip both sides of bread slice into egg mixture. Place 2-3 slices of bread in skillet (depends on how big your skillet is) and cook for 2-3 minutes on each side or until golden brown. Transfer to individual plates and drizzle with warm honey.

Mexican Omelette
3 eggs
2 tablespoons milk
1/2 teaspoon parsley (optional)
1 tablespoon vegetable oil
1/4 cup chopped green peppers
1/2 cup salsa, drained
1/2 cup shredded monterey jack cheese
–Combine first three ingredients in bowl and mix well. Heat up small skillet with oil over medium heat, add mixed ingredients. As the omelette cooks lift edges with spatula and mix centre so it is not too thick. When omelette is relatively solid add other ingredients and allow cheese to melt. Fold in half and serve.

for 10 guests (age range 6 – 60) one of whom has a heart condition.

Ideal one for your age range and the medical condition is make scrambled egg and mix in strips of smoked salmon. Very easy, very tasty and with a touch of luxury and class. If you younger ones do not like the smoked salmon they can have strips of cooked bacon in it. Hurry, Tescos have the smoked salmon on half price offer for a large pack. For those that so wish a glass of sparkling wine also goes down well with it. Champagne is the best but rather costly. Try the Tesco’s CAVA at about £5.00.

Do you know any good brunch breakfast recipes… Something simple and fast?

We are having a breakfast brunch for the ladies in our church tomorrow. I just need some kind of simple recipe that looks like I put a lot of thought and effort. Please help. Thank you!

Sausage balls – just sausage, biscuit mix, and cheese. Mix, roll and bake. It’s the easiest thing in the world, and surprisingly good.

Baked French toast casserole – make it tonight, stick it in the oven tomorrow. Serve it with a spoon.

Hash brown casserole. It has a base of shredded potatoes, topped with ham, cheese and eggs. We like to add onions (saute them first), broccoli, green or red peppers, and whatever other veggies or breakfast meats we have on hand.

Mini croissant chicken salad sandwiches. It’s amazing what the addition of a "fancy" croissant can do for chicken salad. Cut them in half if they’re too large.

Someone mentioned a fruit salad – I don’t want to steal their idea, but here’s a great, easy, FAST version. Drain and mix a can of pineapple tidbits, clementines or mandarin oranges, and sliced peaches (cut them into smaller pieces first). Add 1 small container of vanilla yogurt and a tablespoon or two of instant vanilla pudding mix. Stir until it thickens slightly. If you like, toss in a handful or two of coconut.
